A combi oven that keeps flagging service errors, struggles to generate steam or starts showing scale build-up around the cavity usually has the same underlying issue – water quality. So, do commercial ovens need water treatment? If the oven uses water for steam generation, cooking, rinsing or automatic cleaning, the answer is very often yes.

That does not mean every unit needs the same setup. Hard water, high chlorides, excess minerals and poor filtration all create problems inside the machine. In soft water areas, some operators assume they can dispense with treatment altogether. Sometimes that works, but not always. Which ovens are most likely to need it?

Any commercial oven with a water connection should be considered for treatment, but combi ovens sit at the top of the list. Steam-only ovens, bake-off ovens with steam functions and units with automated wash systems are also strong candidates.

A standard convection oven with no steam and no water feed will not have the same requirement. That said, many professional kitchens now rely on combi technology because it improves output, consistency and menu flexibility. In those cases, water treatment is part of protecting the investment.

Used and refurbished ovens deserve the same attention as new models. In fact, it can be even more important. A professionally refurbished unit may have been fully tested and restored to a high standard, but its future reliability still depends on the site conditions where it is installed. What type of water treatment is needed?

This is where blanket answers become unhelpful. There is no single cartridge or filter that suits every kitchen.

Some sites need scale inhibition or softening because the local water hardness is high. Others need filtration that reduces sediment and chlorine while maintaining water conditions suitable for the oven manufacturer’s specification. Reverse osmosis may be appropriate in certain installations, but not always. If it is applied incorrectly or without considering the manufacturer’s guidance, it can create its own issues.

The right setup should be based on a proper water test and the oven specification. For commercial buyers, the practical point is simple: do not treat water treatment as a generic add-on. It should match the machine and the workload.

Do manufacturers require water treatment?

In many cases, manufacturers do not say you must fit a specific treatment unit in every scenario, but they do set water quality parameters that the incoming supply must meet. If your mains supply falls outside those limits, treatment is required to bring it into range.

That matters for two reasons. First, it protects the oven and helps maintain expected performance. Second, it can affect warranty and service outcomes. If a fault is caused by unsuitable water conditions, that becomes a preventable issue rather than a defect with the machine.

For operators spending serious money on new or refurbished equipment, that should be enough reason to take it seriously from day one. A proper installation is not just about getting power, drainage and extraction right. Water quality sits in the same category.

How to tell if your site has a water quality problem

Some signs are obvious. Kettles and taps scale up quickly. Dishwashers need frequent descaling. Glassware spotting is persistent. Those are useful clues, but they are not enough on their own.

The better approach is to test the supply. A water report or on-site assessment gives you actual figures to work with. That avoids guesswork and helps specify the right treatment system from the outset.

If you already have an oven in place, repeated service issues around steam generation, fill faults, cleaning performance or lime scale warnings should prompt a closer look at the incoming water. Replacing parts without fixing the water supply is rarely a long-term solution.

The commercial case for getting it right

From an operator’s point of view, water treatment is not about overengineering the installation. It is about protecting uptime. A combi oven is often one of the hardest-working pieces of equipment in the kitchen. If it goes down, service slows, menu options narrow and pressure moves elsewhere in the operation.

The cost of suitable treatment is usually modest compared with the cost of emergency repairs, replacement parts and lost productivity.
